Paring Knives are made of quality steel x50CR MO composition with Rockwell hardness of 55-56 HRC for high edge retention and for long lasting durability. Blades conically ground on full length of blade allowing a wider break point for reduced risk of blade fracturing. Stamped blades cut from cold rolled piece of steel and ground, tempered and sharpened. Forged blades are more durable, made by heating steel to high temperature and hammered into shape. Plastic over molded handle knives provide forged blade. Stamped blade handles are Wood, Microban® (synthetic antimicrobial material), Rosewood or Polypropylene. Polypropylene handle colors are Blue, Black, Red or White. Knife lengths are 2-1/3", 2-1/2", 3-1/4", 3-1/2" and 4.
